Description
The Wildflower Mead draws on several archæological finds from Scotland’s Bronze Age in that honey is fermented with a large number of botanicals. In the case of the Balfarg mead, found near Glenrothes, possibly as many as 31 ingredients.
Like the Hedgerow Mead, this will be different every time I make it, as it is dependent on what I can forage.
This first one is dry, with an elusive hint of aniseed. It is made with sweet cicely pods and flowers, and flowers from broom, gorse, hawthorn, rowan, elder, meadwort, wild rose, yarrow, and heather.
